Peanut Butter Banana Toast
- wheat toast
- peanut butter
- banana slices
Toast the bread as desired, then add the peanut butter along with the bananas.
Toasted Strawberry Bagel
- bagel
- cream cheese
- strawberries
Simply toast the bagel as desired, then spread it with cream cheese and add strawberry slices.
Jodi’s Tater Tot Egg Cups
- 6-7 eggs
- 1 small bag frozen tater tots
- 1 cup of shredded cheddar cheese
Spray a 12 cup muffin pan with cooking spray, and put 2 frozen tater tots in each cup. Put that in the oven at 375 degrees for about 5-6 minutes. While those are getting warm, whisk together 6-7 eggs, a little milk, and your chosen seasonings.
Take the pan out of the oven. Using the bottom of a drinking glass or cup – press down to create a tater tot crust. If it smashes down easily – its ready to add the eggs. If it is still frozen, it needs to go back in the oven for a few minutes.
When the tater top crust is soft and flat, pour an even amount of eggs into each muffin cup, and top with shredded cheese. Bake for about 9 minutes, OR until egg doesn’t jiggle when it shakes. 3 ingredients! Heats up well. You CAN add: bacon crumbles, ham pieces, peppers, etc!

Just add and mix as desired.
Mexican Egg Roll-Up
- scrambled egg
- salsa
- tortilla
You know what to do with this one!
Avocado Wheat Toast
- 1-2 pieces of wheat toast
- 1-2 boiled eggs
- a ripe avocado
If you use 1 piece of toast, you’ll just need to smear half an avocado on the toast and top with 1 boiled egg. If you use 2 pieces of toast, you’ll smear a whole avocado on the pieces of toast and top with 2 boiled eggs. This is Jodi’s fave breakfast!

- Tortillas
- Peanut Butter or Nutella
Warm tortilla in microwave. Smear PB or Nutella on tortilla and roll-up. Serve with fruit or cheese cubes.
Chorizo Roll-Ups
- tortillas
- chorizo
- baked potato; diced
Warm tortilla in microwave. Cook chorizo and potato in pan.
Mini Biscuit Waffles
- (1) 7.5 oz can refrigerated tender layer biscuits
- 1/3 cup maple syrup
- sliced banana
Spray waffle maker with cooking spray. Heat waffle maker. Separate dough into 10 biscuits. Place up to 4 biscuits at a time on waffle maker. Close lid of waffle maker, cook 1 to 2 minutes or until light golden brown. Serve immediately with remaining ingredients.
